Roasted Garlic and Onion Marmalade

Adapted from a recipe from Julee Rosso's
Great Good Food

2 tablespoons broth, your choice on the flavor
1 1/2 cups water
12 cups combination of thinly sliced red and
yellow onions and roasted garlic 1/4 cup
balsamic vinegar
3 cups sugar
1 packet of Sure Jell

In a large saucepan over medium-high heat, warm the broth and water. Add the onions and garlic , cover, and cook until translucent and very soft, about 45 minutes.

Add the sugar and stir until completely dissolved. Uncover, lower the heat, and simmer for 1/2 hour, stirring periodically.

Add the vinegar and cook until the onion is caramelized, about 45 minutes longer. Stir in Sure Jell and cook until thickened.

Process into sterilized jars in a 10-15 minute hot water bath. You may add food coloring to the mixture if you wish.

NOTE: This recipe is adapted from an onion marmalade recipe and should be adjusted to suit your taste. Taste it before you put it in the jars. Add more garlic or sugar or vinegar if you want. I used sherry vinegar in my recipe with good results, but I'm sure the balsamic will work well also.
