GREEN CHILI STEW
1 1/2 lb. round steak in
1/2-inch dice
2 c. chopped green chili,
roasted and peeled
1 onion, diced
3 to 4 potatoes, diced
1 Tbsp. red chili powder
1 tsp. cumin powder
1 tsp. oregano
1 tsp. garlic salt
2 cans (12 oz.) tomatoes and
green chilies
2 cans water
Brown steak in large kettle. Add onions, green chilies
and the tomatoes. Stir in spices, 1 can water and potatoes.
Simmer 2 to 3 hours. Add 2nd can of water as needed. Serve in
deep bowls with flour tortillas and melted cheese.
GREEN CHILI STEW
1 lb. extra lean ground beef
5 potatoes, sliced small
1 small onion
1 can green chili, diced
(mild)
1 can tomatoes, diced
1 can tomato sauce
1 tsp. chili powder
salt and pepper to taste
Cook ground beef and diced onions in fry pan, add green
chili, tomatoes, and tomato sauce. Cook potatoes separate.
When done add to ground beef mixture. Do not drain water off
of potatoes. Add salt, pepper and chili powder. Simmer for
about 30 minutes.
