Potato Salad (serves 50)
10 lbs potatoes 1 pt French dressing 1 cup onion minced 2 tbsp salt 1 tbsp paprika 8 hard boiled eggs (diced) 1 cup chopped green pepper 1 lbs clery diced 1 pint mayonnaise
Cook potatoes, cool, peel and dice. add salt onion and French dressing and marinate. Add remainer of ingredients and mix carefully (more mayo maybe added). Refrigerate well. |
