adapted from Recipes to Lower Your Fat Thermostat
Combine in jar:
1/2 cup cumin
1/2 cup chili powder
4 Tb. salt
1-1/2 c. dried minced garlic
4 Tb. black pepper
1-1/2 c. dried minced onions
To make: rinse and sort 1 lb. beans. Soak in 4 c. water
overnight or fast soak (bring to boil, remove from heat,
cover and let sit 1 hour) Pour soaked beans in crockpot
with 2 cups fresh water, 3 Tb. mix &cook until tender.
Before serving, add 1-2 tsp. salt. For refried beans,
mash to desired texture and heat in frying pan.

Chili Powder
8 dried New Mexico Red Chili Pods (HOT)
1/2 package (3/8 oz.) Chili Pequin
1/2 Package (3/8 oz.) Chilitepin
24 dried Japanese chilies
2 dried Habanero chilies
6 whole allspice berries
2 bay leaves
2 Tablespoons garlic powder ( NOT garlic salt)
2 Tablespoons onion powder ( again NOT salt)
2 Tablespoons ground cumin
2 Tablespoons crushed oregano
2 Tablespoons crushed sweet basil
1 Tablespoon cracked black pepper
1 Tablespoon Paprika
1/8 teaspoon sea salt
Remove stems from peppers and break them into pieces to fit in the grinder, along with the allspice, bay leaves, black pepper, oregano, sweet basil and salt..
grind to as fine a powder as your grinder/blender can manage
(as the grinder i use is fairly small...this takes 4 or 5 batches to grind
everything) put the powder in a small coverable container
( I use a 12 ounce tupperware bowl) add the garlic powder, onion powder,
cumin and paprika cover and shake well to blend...
you now have HOT!!!! Chili Powder.
for Medium heat leave out the habaneros and for Mild remove
the seeds from the peppers as you break them up for grinding
this powder tends to lump up in storage..so keep tighly covered
and in a cool dry place...before using stir it with a fork to break
up the lumps.
For making chili I use about 1/3 of the batch of chili powder for a 6 quart

4 tsp. instant minced garlic

Add 3 Tbs. mix to 1 lb. scrambled beef, 1/2 cup water
and 1 cup ketchup or crushed tomatoes. If you like sweeter sloppy joes, you
can add a bit of sugar to mix

CHILI SEASONING MIX
source: Reader's digest
1 cup sweet green pepper flakes
(available in most supermarkets)
3/4 cup chili powder
1/4 cup ground cumin
1/2 cup onion flakes
1/4 cup parsley flakes
1 teaspoon garlic flakes
1/2 teaspoon red pepper flakes
Place all ingredients in a 1 quart jar, cover tightly and shake well to mix.
Store in a cool, dark dry place for up to 2 months. Makes 2 3/4 cups
1/2 cup mix = calories 124, total fat 5g, saturated fat 0, sodium 243 mg,
TO MAKE CHILI CON CARNE: In a medium size heavy saucepan over moderate heat,
brown 1 pound very lean ground beef and drain off any fat. Add 1 can (1
pound) low sodium tomatoes, drained and chopped, and 1 cup water or low
sodium beef broth. Stir in 1/2 cup Chili Seasoning Mix. Reduce the heat and
simmer, uncovered, for 20 minutes, stirring occasionally. Stir in 2 cups
cooked and drained red kidney beans and heat through serves 4
Note: If using sweet chili powder rather than hot in mix, I add 1-2 Jalapeno
peppers to chili. Ground Turkey also works well in place of Ground beef.

Chili is a very regional dish. It can be served over rice, with noodles or
crackers, or substituting cubed pork for the beef. It is great on taco
salad, over hot dogs, or in a casserole dish topped with cornbread. In my
opinion, itís delicious any way it is served! Use a rounded 1/2 cup of mix
per pound of meat. *A note regarding the tomato product. I find it
convenient to use the cans of chunky crushed tomatoes, but when I have
canned or frozen my own tomatoes, I simply whisk them around in the blender
or food processor a bit before adding them to the recipe.
This makes the equivalent of about 12 packages of chili seasoning mix.

OR 1 heaping Tb. Italian seasoning mix
Add 3/4 cup dry mix to 1 lb. cooked ground beef,
3 24-oz. cans of crushed tomatoes, 1 cup fresh or canned mushrooms, one cup
grated zucchini &/or grated carrots, & celery & onions to taste. Allow to
simmer in crock pot all day
or in stock pot on stove an hour or more until flavors blend
& vegetables are soft. Try this using TVP, Ground Meatless,
or substituting cooked lentils for some of the beef. This is also good
cooked meatless as a marinara sauce. Chicken, beef, beans or cheese can be
added later. Freezes well.

Old Bay Seasoning
Old Bay is a staple in Baltimore!
If you'd like to make your own:
1 tbsp ground bay leaves
2 1/2 tsp celery salt
1 1/2 tsp dry mustard
1 1/2 tsp black pepper
3/4 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp paprika
1/2 tsp red pepper
1/4 tsp ground mace (optional)
1/4 tsp ground cardamom (optional)
Combine all ingredients: store in an airtight container.
It's great also to season the flour for fried chicken, and on french
fries!

This seasoning mix is excellent to have on hand to sprinkle on cooked
or uncooked fish, vegetables, or snacks. To increase the heat, add
more cayenne. Mix together all the ingredients. Store leftovers in a
tightly closed glass jar. It will keep its pungency for over a month.
Yield: 5 Tbsp
jerk rub: 1 Onion, fine chopped 1/4 ts Ground nutmeg
1/2 c Scallion, finely chopped 1/2 ts Ground cinnamon
2 ts Ground thyme 4 Hot peppers, finely ground
2 ts Salt 1 ts Black pepper
1 ts Allspice
If you've ever had jerked chicken or pork this is the rub that's used.
Mix together all the ingredients to make a paste. a food
processor
fitted with a steel blade is ideal for this store leftovers in the
refrigerator in a tightly closed jar for about a month.

4 Green onions
1 ts Dried thyme
1 Garlic clove
1/2 ts Ground nutmeg
1 Hot pepper, such as jalapeno
1/2 ts Cayenne (or to taste)
-or Scotch bonnet, seeded
2 tb Fresh lime juice
1 tb Ground allspice
Combine all ingredients in blender; pulse to puree mixture. Store in
covered glass container in refrigerator. Make 1/3 cup.
To use, rub 2 teaspoons or more jerk seasoning over surface of meat.
Let stand at least 1 hour before cooking. Flavor is enhanced if
marinated overnight.

12 Med-skinned oranges or -lemons
Makes 1/4 c powdered orange peel or 1/8 c powdered lemon peel
a cheese or vegetable grater
Use the coarse side of a cheese grater to grate off the citrus skin in
strips; use only the orange (or yellow) part of the skin avoiding the
bitter white part. Spread the peel strips on two ceramic plates and
let dry, uncovered, at room temperature, for 3 to 4 days. When the
peels become brittle and shriveled, store them in a small glass jar.
To use: Whirl the whole dried peels in a blender or food processor
until powdered, or use a mortar or pestle. The strong citrus oil
will stay within the dry peels and will be released fully upon
powdering. Use whole dried orange peel in tea blends and to perk up
hot chocolate. Use powdered orange or lemon peel in place of extract
in baking; also in toppings, to flavor sugar-bowl sugar and to flavor
honey, duck, and barbecue sauces.

15 Coins dried ginger
2 tb Ground mace
3 Cloves dried garlic

1>. Position rack in lower third of the oven. Preheat to 300 deg.F 2>.
Combine coriander, mustard, cumin, fennel, celery, mace, turmeric annd
cloves in 11 x 8 x 2 glass baking dish. Stir thouroughly 3>. Bake in
preheated oven for 30 minutes, stirring occasionally. Cool
completely. 4>. Stir in the red peeper flakes, dried ginger and dried
garlic. 5>. Working in small batches, gring mixture finely in a spice
mill, coffee grinder, mini food processor, or blender (mixture ground
in a blender will not have as fine a texture). Divide evenly among
jars. Seal tightly. Keeps fresh for up to 6 months. Makes 5 4-ounce
jars.

Mix well and store indefeinitely in the refrig in a covered container.
Use to coat chicken, pork chops......just like Shake 'N' Bake and

Candy,VA (10:18:41 pm) : I make spice trees for Christmas. Have to buy
spices all year as it is expensive. Use styrofoam Tree, cover with red or
green fabric(using straight pins), wrap little squares of net (red and
green) around cloves, nutmeg, allspice,etc, wrap pieces of cinnamon stick
with red yarn and stick on tree. Fill in with little gum drops (stiuck on
with pins. Wrap in saran wrap and foil to save for next year.
