Title: Lesson: Crackling Candy Apples
Categories: Fruits, Desserts
Yield: 8 servings

8 sm Red apples
2 c Granulated sugar
1 c Water
1/2 c Corn syrup
1/4 ts Red food colouring

1. Remove stem from each small apple; insert wooden stir-stick, for holding,
in centre of stem end. Set aside. Grease baking sheet; set aside.

2. In 12-cup heavy-bottomed saucepan, combine sugar, water and corn syrup;
cook, stirring, over medium-low heat for 8 minutes or until sugar has
dissolved. Increase heat to medium-high and bring to boil, brushing down
side of pan occasionally with brush, dipped in hot water to prevent
crystallization.

3. Boil, brushing down side occasionally but not stirring, for 15-25 minutes
or until soft-crack stage of 290F 143C on candy thermometer, or until 1/2 ts
syrup dropped into cold water separates into hard but pliable threads.

4. Remove syrup from heat; very quickly stir in red food colouring.
Immediately plunge bottom of pan into ice water and hold for about 15
seconds or until sizzling stops.

5. Holding each apple by the wooden stick and tilting the saucepan, swirl
each apple in candy syrup until well coated all over.

6. Lift apple and quickly swirl over pan to allow excess to drip off. Place
on prepared baking sheet; let stand at room temperature for at least 30
minutes or until hardened.

Tip: Choose the reddest small apples available. Macintosh, Spartan and
Courtland apples are excellent.

Watch the boiling sugar mixture carefully, because the temperature rises
quickly near the end of the cooking process and the mixture burns easily;
plunging the pan into ice water stops the cooking and prevents burning. Wear
rubber gloves when swirling the apples to avoid sugar burns.

Store apples, loosely covered with plastic wrap, for up to 2 days at room
temperature.

Subject: Mulled Cider

Take equal amounts of Cran-x-berry juice and Apple juice. It can be
Cran-raspberry, Cran-apple, or just plain Cranberry juice; low-cal
varieties work just fine. Cheaper off-brands are fine too.

Pour them in a heavy pot. Add a handful of cinnamon sticks broken into
1-2" pieces and a bunch of cloves (whole cloves). Optionally, add some
citrus rind (i.e., lemon or orange peels). Bring to a low simmer, let it
simmer for an hour or so.

Strain out the cinnamon and cloves (and rinds) -- this is important
because if you leave the cloves and cinnamon in, the liquid will get
bitter.

Serve hot. This keeps a long time in the fridge, and can be nuked or
re-heated at will. It's great with a shot of whiskey/brandy/rum!

In a 4-cup measure combine apple cider and Red Hots. Micro-cook,

MULLED CIDER 2

5 c. apple juice
1/4 c. lemon juice
1/4 c. lightly packed brown sugar
4 whole cloves
1 1/2 " piece cinnamon stick
1 1/2" piece dry ginger root
dash grated nutmeg

Let simmer 30 min. Strain through coffee filter
Serve with cinnamon stick for stirrer.

.
I put 4 or 5 cups of apple juice in a pot and add an inch or two of
cinnamon stick, dash of nutmeg, maybe some allspice, and an orange cut in
half (peeling and all, washed) with 4 cloves stuck in each half's peel.
I cook for a while at that almost boiling point, and squeeze the orange
while it's cooking. It's a pulpy spicy warm drink, and pretty good.
You may not want to squeeze the orange.

you might also try stirring with a peppermint stick, it adds another vector
to the zing..

My husband and I were invited to a costume Halloween
Party at a neighbor's house. The hostess had informed
us we would be bobbing. (Dunking) We assumed for
apples. Well! She had rented a huge, plastic
champaigne glass. (About 3 to 3 1/2 feet high) It was
filled with what looked like water. Wrong! It was a
gigantic Martini and we bobbed for the olives! It
certainly was alot of laughs! We moved soon after and
I understand this party has become an annual event.
BTW, as I remember, it was necessary to refill this

Hints for halloween fun

Take a teaspoon or so of black paste for food and stir it into any basic
sugar
cookie recipe. The dough will turn a rich black that's perfect for making
bat
cookies.
Regular green food coloring does nice things to Halloween Jello. Make a bowl
of
orange jello and when it's semi-solid drip several drops of green coloring
onto
the surface and stir them in gently. They'll swirl into dark demonic tornado
clouds - a dab of back whipped cream made by adding more of that black paste
to
partially whipped cream makes a pleasantly disgusting finishing touch.
Scrambled eggs feel and look much more like brains than cold spaghetti - add
a
few drops of green, red and blue food coloring as you're beating the eggs
and
the final product will frighten even the most hardened child.
A drop of two of red coloring turn grapefruit sections pale pink making them
into very convincing thumbs.
Drop a pint of cherry tomatoes into a pot of boiling water, blanch them for
a
minute and then drain and slip off their skins. Instant bloody eyeballs.
If you stir baking soda into vinegar, it'll foam right out of the glass.
You can also shake salt over a lighted jack o lantern candle and make blue
sparks.
