CARROT COOKIES
1 c. sugar
3/4 c. shortening
1 egg
1 c. baby food carrots
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon extract
Combine sugar and shortening. Mix and then blend in
sifted dry ingredients gradually. Add lemon extract and
vanilla. Drop by teaspoonful onto greased cookie sheet. Bake
at 350 degrees for 15 minutes.
Cream Cheese Frosting:
4 oz. cream cheese (room
temperature)
1/4 c. butter
1 3/4 c. powdered sugar
1/2 tsp. vanilla
Beat all ingredients well.
Frost cookies when they are cool.
