Wasn't sure what you meant by 'reg beets'. I figured you didn't want to use the canned ones. Hope this is what you want. PICKLED EGGS 5 medium beets, cooked, peeled and quartered 2 cloves garlic, crushed 3/4 tsp. salt 1 1/2 c. cider vinegar 5 Tbsp. granulated sugar 1 1/2 tsp. whole pickling spice 8 hard-cooked eggs, shelled Mix together the beets, vinegar, sugar, garlic, pickling spice and salt. Let stand for 45 minutes. Place the shelled eggs in a large jar. Add the beets with their marinade. Cover and refrigerate for two or three days or even a week. Serves 8.
