Chicken Lasagna Recipe By : Southern Living Serving Size : 8
1 (8oz) pkg med. egg noodles -- uncooked 1/2 cup butter or margarine 1/2 cup flour 1 teaspoon salt 1/2 teaspoon pepper 1 teaspoon dried basil 4 cups chicken broth 4 cups chopped cooked chicken 1 (24oz) carton cottage cheese 1 large egg 2 cups shredded mozzarella cheese 3/4 cup freshly grated Parmesan cheese
Cook noodles according to pkg directions; drain and set aside. Melt butter in a large saucepan over med. heat; stir in flour and next 3 ingred. Cook, stirring constantly, 1-2 min. Add broth, airring until smooth; bring to a boil. Reduce heat, and simmer 5-8 min or until thickened and bubbly. Stir in chicken; remove from heat. Combine cottage cheese and egg, stirring well. Spoon 1/3 of the chicken mixture in bottom of 13x9x2" baking pan. Top with half the noodles, half the cheese mixture, and 1 cup mozzarella. Repeat layers, ending with chicken mixture. Sprinkle with Parmesan cheese. Bake for 1 hr. at 350 degrees.
