A NICE thing ... give the premade batter & a few baked to a new mom, nice to have as busy times erupt.

Refrig. Bran Muffins:
~~~~~~~
2 cups Brown sugar (+1/4-1/2 cup white sugar)
1 cup margerine or butter crisco
4 cup "all bran" (cereal)
2 cup boiling water
~~~~~~
2 eggs
1 qt. buttermilk
1 tea. salt
~~~~~~~
5 cups flour
5 tea. baking soda
~~~~~~~~
2 cups bran flakes (40% bran flakes is fine)
~~~~~~~~
1. Mix first section together and pour boiling water over, let stand till cool.
2. Mix in next set of ingredients, mix well.
3. Stir in the next set.
4. Now add the bran flakes
Makes 4 qts batter(4 doz. muffins. Stays in fridge for 6-8 weeks, MARK your container with the date!
bake as needed 400o 15-20 min.
Now what I want to know is WHO tested the recipe in the first place to see that it lasted this long ????? :) It really does last, I've made at the tail end and it was fine.
enjoy ...
Ps I think you could use other than 40% bran flakes at the end and add rasins/whatever should you want to.
