Candied Bacon
(I make this as an hors d'oeuvre to serve at cocktail parties)

1 lb. bacon, slices cut crosswise in thirds. Place on broiler pan and bake at 350 to 375 until most of the fat has been released. Drain. Brush with a mixture of brown sugar, powdered ginger and soy sauce (just enough soy sauce to moisten; not too runny). Bake awhile and turn, baste again and bake until crisp. Remove to racks and air-dry overnight. Eat with the fingers.
