We use Halibut For our mock lobster ( I think any good firm mild tasting white fish will work). We use enough for a meal, we cut it into 1 1/2 inch to 2 inch cubes. Bring a gallon of water with 3/4 cup salt and 3/4 cup sugar to a boil, add the fish, they will sink to the bottom, when the fish floats to the surface it's done. We think it taste like lobster, a little diffrent texture. Hope this helps.
