Hi Rhonda!

I have never used chili seasoning, but I season chili with chili powder, black pepper, sometimes red pepper (if you like it spicy, salt and celery seed (or celery salt and then use less salt). I think this is a good combination that tastes like chili and doesn't add the dried onions you are concerned about so it might work for your recipe. Cajun seasoning, such as Tony Cachere's or Zatarains, is also good for chili and might work for you if you have it on hand. Personal tastes vary, but I think adding green bell pepper to chili also adds to the good chili flavor blend.
