Thanks for the Pork Chop recipe. It sounds great. Since you have a starch already, a vegetable without a lot of sauce may round out your menu. We love to prepare squash this way, and it's very pretty. I bet zucchini would work as well, if you'd prefer something green.

Grilled Squash Fans (Southern Living)
6 yellow squash
3 plum tomatoes
2 T chopped fresh basil
1 tsp salt
1 tsp fresh ground pepper
1/2 c olive oil
3 cloves garlic, pressed

1)Cut each squash lengthwise into 1/4" slices, cutting to within 1" of stem. Cut tomatoes into 1/4" slices.
2)Combine basil, salt, pepper, oil in lrg. bowl. Add squash and tomato, tossing gently to coat; let stand 1 hour.
3)Remove vegetables from marinade, reserving the marinade. Insert tomato slices between squash slices and secure with wooden skewers.
4)Grill, covered with grill lid over med-high heat 8 minutes on each side or till crisp tender, basting often with the reserved marinade.
Serves 6
