I have used this recipe for any kind of lean meat jerky:
Frontier Jerky
1 t salt 1/4 t pepper 1 t garlic powder 2 T Worcestershire sauce 2 T liquid smoke 1 lb lean meat, thinly sliced
In a small bowl, combine all ingredients but meat. Mix well. Place meat 3 or 4 layers deep in a glass, stoneware, plastic or stinless steel container, spooning marinade mixture over each layer. Cover tightly. Marinate 6 - 12 hr. in the refrigerator, stirring occasionally and keeping the mixture tightly covered. Place on dehydrator racks and dry until when a piece is cooled, it will crack when bent but not break. There should be no moist spots.
