Broccoli Salad:
1 bunch brocolli
1/2 c. raisins
1/2 lb. crumbled bacon
1 sweet onion, sliced in rings
1 c. Miracle Whip
1/2 c. sugar
2 Tbsp. vinegar

Peel brocolli stems and slice. Use all of the brocolli. Combine with raisins, bacon, and sweet onion rings. Mix the Miracle Whip, sugar and vinegar together and add to the veggies. Refridgerate before serving. (This is great for people who don't exactly like brocolli...they will be amazed at what it tastes like)


Pink Lady Salad:
1 (8oz.) pkg. cream cheese
1 oz. marachino cherry juice (mainly for the color)
1 can drained fruit cocktail
1 c. mini marshmallows
1 pkg. Dream Whip, whipped, or 1 (8oz.) tub Cool Whip

Soften cream cheese and add juice. Add cream cheese to whipping cream. Mix and add fruit cocktail, marshmallows and maraschino cherries (if desired). Chill. Other fruits can be used. Canned peaches are good to use.


Tomato Mozzarella Salad:
3 medium tomatoes, sliced
1/2 lb. part skim Mozzarella cheese, thinly sliced (I used grated last time)
1/3 c. safflower oil (you can use Olive Oil)
3 Tbsp. red wine vinegar
3 Tbsp. chopped parsley
3 Tbsp. finely chopped onion
1 Tbsp. finely chopped fresh basil or 1/2 tsp. dried basil
dash of salt
dash of pepper

layer tomatoes and cheese in a shallow dish. In small jar with tight fitting lid, place the oil, vinegar, parsley, onion, basil, salt and pepper. Cover and shake well. Pour over tomatoes and cheese. Cover and refridgerate several hours, occassionally spooning dressing over the tomatoe salad.
