Here are a couple of recipes you miight like to try:

BBQ Beef Sandwiches

1 eye of round roast
1 cup dry red table wine
1 large onion -- chopped
3-4 cloves of garlic -- peeled and minced
1 T. Coleman's dry mustard (or to taste)
1-2 carrots -- scrubbed and minced (depends on size)
2-3 ribs of celery -- scraped and minced
1-2 T. brown sugar
2 T. Worchestershire sauce
about 2 cups of catsup
1 sweet green or red pepper, minced
olive oil
water

Brown roast on all sides in olive oil and pour wine over and simmer until wine is reduced by half. Add 2 or 3 inches of water and roast in 325F. oven for 2 or 3 hours or until meat breaks apart into chunks with a cooking fork. Saute veggies in olive oil until soft but not brown. Add to meat along with remaining ingredients
and roast for 1 - 1 1/2 hours , adding more catsup, if needed.


Mexican Beef

1 eye of round roast
1 cup dry red table wine
1 can stewed tomatoes (Or 2 cans, if roast is big)
1 can beef broth
1 envelope taco seasoning mix
1 medium onion
olive oil
2-3 cloves garlic -- peeled and minced

Brown roast in oil on all sides. Pour wine over and simmer until wine is reduced by half. Sprinkle taco seasoning over, then tommatoes on top. Sprinkle garlic,
onion (mince both) and then top with beef broth. Roast at 325F. 2 1/2 - 3 hours or until tender, adding more water or broth, as needed.

May be sliced and eaten, good in sandwiches, and chopped for tacos.

Booth recipes are good done in the crock pot too!!
