Summer Marinara Sauce

Goodies:

Big Basket of Tomatoes (3 - 4 lbs.)
1 Small Can Tomato Paste
1 Large Onion (coarsely chopped)
5 - 6 cloves garlic (minced)
Olive Oil (about 2 Tablespoons)
Big Bunch of Fresh Basil (about 1 cup)
Dry Wine (about a 2 second pour or 3/4 cup)
Fresh Oregano (about 2 Tablespoons)
Fresh Parsley (about 2 Tablespoons)
Fresh Thyme (about 1 teaspoon)
Fresh Ground Black Pepper to Taste
Salt to Taste

The Fun Part:

Scald tomatoes in boiling water until skin peels easily (about a minute). Squeeze
out seeds and remove core. Use as many plum tomatoes as you can or what
ever ripe tomatoes you can get. Blend tomatoes and paste with a food processor. The hand -held wand style work best. If you use a pulse style, don't
over do it!!

Slightly brown the garlic. Add onion and saute a few minutes until it sweats. Add oregano, parsley, thyme, salt & pepper, and wine. Use what ever dry wine
you like to drink_____ if it is good in your glass it will be good on your plate!!

Lower heat and add basil. Simmer until you finsh that bottle of wine or you reach
the consistency that you desire (1 - 2 hours).

Serve over your favorite pasta topped with freshly grated parmesan cheese.

Serves 4 - 6 people.
