Years ago a friend brought over these wonderful "colorful rice squares" she did give me the recipe and I've lost it. Here's what I remember going into it: Cooked rice, lots of eggs, shredded zuchinni, red and green peppers, olive oil and there seems to be ingredients that I am forgetting ..... you mixed all this together and pressed it down in a 9 x 13" baking pan baking for about an hour after it was baked and cooled down cut it into squares to serve cold (refridgerated) finger food.
