This recipe is from "Good Old Grits Cookbook" 1# medium-size fresh shrimp 6 slices bacon Peanut oil 2 cups sliced fresh mushrooms 1 cup sliced scallions [green onions] 1-2 cloves garlic, crushed through a garlic press 4 teaspoons fresh lemon juice 1-2 dashes Tabasco sauce 2 tablespoons chopped fresh parsley salt and fresh ground pepper to taste 1 recipe Cheese Grits Cheese Grits 1 cup stone ground grits [I use Quick Grits] 4 cups water [as much as needed for quick] 1 '2 teaspoon salt 2 tablespoons butter [margarine] 1/4 teaspoon pepper & a pinch of cayenne 1 cup shredded sharp chedder cheese [or more, to taste] Prepare the boiled grits, according to directions on the box, remove from heat and add rest of ingredients. 1. While grits is cooking, rinse shrimp & pat dry on paper towel and set aside 2. Dice the bacon and fry lightly in a large skillet until browned at the edges, but not too crisp. Drain on paper towel and set aside. 3. Add enough oil to the fat in the skillet to make a thin layer. Heat over medium heat until the fat is quite hot. Add the shrimp and cook till they begin to color.Add the mushrooms and saute', stirring frequently, about 4 minutes. Sprinkle with scallions and bacon, then add the garlic. Season with the lemon juice, tabasco,parsley,salt & pepper. 4. Divide the grits among 4 warm plates. Spoon the shrimp mixture over the top and serve immediately.
