Hamburger soup is one of those thousand and one ways to do it recipes! Here's what I do (never had a written recipe so it comes out different depending on my mood). Amount of veggies to use is really variable depending on whether you need to stret-t-t-t-tch the meal.

1 pound ground beef
1 yellow onion, chopped
1 stalk celery, chopped
1-2 cloves garlic, coarsely chopped
saute together in a large pot till hamburger is crumbly and nearly done, then drain fat.

Stir in
1 15-oz can "recipe ready" style diced tomatoes (or any canned tomatoes)
1 8 oz can tomato sauce or puree
1 8 oz can full of water, or beef broth, or wine
1 or 2 carrots
chopped parsley
1-2 medium potatoes, diced
1 15-oz can kidney beans, drained and rinsed
1/2 can diced green chiles (or to your taste, or omit)
salt, pepper, oregano

Cover pot and simmer on top of stove until potatoes and carrots are tender. This is even better the next day! The sauce thickens on standing and it becomes a hearty stew instead of a "soup" - we like it both ways and it seems like a different meal.
