John, This is from "Farm Journal's Complete Pie Cookbook". It may be close to what your looking for.
Mocha Pecan Pie 1 envelope unflavored gelatin 1 c. cold water 3 tblsp. cocoa 1 c. sugar 2 tsp. instant coffee powder 3 eggs, separated 1 tsp. vanilla 1/2 tsp. rum extract (optional ) 1/4 ts;. salt 3/4 c. finely chopped pecans 1/2 c. heavy cream, whipped Pecan halves for garnish
Soften gelatin in 1/4 c. water. Combine in saucepan ------cocoa, 3/4 c. sugar, 3/4 c. water and coffee powder, stirring to dissolve sugar. Bring to a boil and cook gently 4 to 5 minutes, stirring constantly. Remove from heat. Pour a little of hot mixture over slightly beaten egg yolks, mix and stir into remaining hot mixture. Cook until mixture thickens, about 5 minutes, stirring constantly. Remove from heat. Add vanilla, rum extract and softened gelatin. Stir until gelatin is dissolved. Chill until mixture mounds slightly when dropped from a spoon. Combine egg whites and salt and beat until frothy; add remaining 1/4 c. sugar gradually, beating until glossy, stiff peaks form. Fold pecans into gelatin mixture; then fold in egg whites. Spoon into cool Coffee Nut Crust. Chill until firm. To serve, garnish with spoonfuls of whipped crean arranged around edge of pie, placing a pecan half on each spoonful of whipped crean. Serves 8
