I came across this one day and saved it for some reason, must have been for you! If you try this (the recipe is very simple), I hope they work out.
OREO Chocolate Crunch Cupcakes
2 - lbs cream cheese, softened 1 - C sugar 1 - C milk 7 1/2 lbs - chocolate cake batter 2 tsp - almond extract 2 1/4 lbs - OREO bulk cookie pieces, large or medium crunch (crumbled up OREO's) As needed - prepared icing As needed - OREO base cake crumbs (crumbled up OREO's)
1. Mix the cream cheese, sugar and milk until smooth, set aside. 2. To 1 batch of chocolate cake batter (7 1/2 lbs) that would yield 1 sheet pan, add almond extract and OREO bulk cookie pieces; gently swirl in cream cheese mixture. 3. Deposit cupcake batter into lined, 3-oz muffin tins using a #20 scoop (check a bakery to see what that equates to). Bake according to cake batter directions. 4. Top with icing of choice and sprinkle with OREO base cake crumbs.
