Most of my ideas/uses are already given - corn bread/muffins; salas (love it there!); soups/chowders.
However, I do put it in salads - like a 'gazpacho' type salad - with chopped up peppers (all colors), cucumber, tomatoes, tomatillos, onions -- and often we'll also add something like black beans. We mix with a dressing and then refrigerate a day or 2. Serve over greens. It's not a 'recipe' - its a 'do'.
Do you make frittatas? I often use leftover veggies in there -- saute onionsand whatever in a big flat pan - and then add egg mixture (like for scrambled eggs) - and let it cook slowly. Then when almost set - put some grated cheese (Monterey Jack or whatever) atop and stick under the broiler for just a few seconds. We put whatever veggies we have - zucchini, corn, potatoes, etc. It's sort of a pancake/omelet/whatever. Served with a salsa or catsup - it's a nice quick meal.
Corn is good in yeast breads - especially if you're making one with a bit of cornmeal and rye flour.
Someone above mentioned grilled corn with chipotle butter -- we have just started grilling our corn after reading the Jamisons book THRILL OF THE GRILL -- you simply husk the corn - and rinse under the tap - shake off. And grill. Brush it with a bit of melted butter (whatever) - and it takes anywhere from 8 to 20 minutes. Hubby usually moves it from hot to medium part of grill after it's started. I NEVER liked it grilled with husks on - tasted too 'steamy'. This is great - and you dont' add any more butter! Can put herbs (or chipotles or whatever) in the butter. And for 8 ears of corn I usually only use about 2 tablespoons butter. It does get brown/charred in spots but comes out so nice and moist. Book said that this is for 'fresh' corn - and if you buy some that is 'old' - to soak it first - I think about 20 minutes. I dunno -- we've had only really fresh lately.
Oh, my daughter brought bruschetta to our family get-togther last week and she had put some leftover grilled corn kernels in with the other toppings she had on the bruschetta.
Maybe I'll tryit on the pizza this coming week?????? And maybe not. |
