I've also used hazelnuts instead of pine nuts (also called pignoli nuts). I find them in big bags at the Price Club. Are expensive but keeps really well if frozen or refrigerated. When I want some I take them out a few hours before and let them get to room temperature.

Also, pesto (without the cheese) freezes better than with the cheese and tastes better after you have defrosted it. You can freeze it in ice cube trays, small containers or ziploc-type bags. I have frozen in all types of containers, make sure they are freezer safe.

Pesto is a most delicious sauce. Good luck and enjoy.
