We have a friend that's husband was in a terrible car accident and was in the hospital and rehab for 3 months. They have been living in a city about an hour from home and now they have jsut returned home. She is having to go back to work this week and care for him. I told her I wanted to make dinner for her and am going to do a roast, potatoes, carrots, onions, homemade bread, mixed salad and need a dessert. He is diabetic so she said just don't worry about dessert, but I thought they might enjoy one if I could find a good "legal" one. If any of you have a good tried and true one I good use the recipe!
