CHOCOLATE FRENCH SILK PIE

Been making this pie for about 10 years now. EVERYBODY loves it, and it is VERY rich and creamy.

1/2 cup butter or margarine, softened
3/4 cup sugar
2 squares (1 oz. each) unsweetened chocolate, melted and cooled
1 tsp. vanilla
2 eggs*
1 (8 inch) pastry shell, baked and cooled

In a small bowl, cream butter; gradually add the sugar; cream until light and fluffy.

Blend in chocolate and vanilla. Add 1 egg and beat 3 minutes on medium speed of electric mixer. Add the other egg and beat another 3 minutes. Turn into baked pastry shell.

Chill several hours til good and set. Garnish as desired.

NOTE: This is beautiful with a line of Redi-Whip sprayed around the outter edge and chocolate curls on it. YOu may want to make it look more Christmasy though. Maybe use those Colored Chocolate Sprinkles that are found on the cake aisle at the store. Maybe crushed holiday M&M's or something of that sort.

Hope you enjoy!

Editor's note:

*Use pasteurized egg product (like Egg Beaters) or refer to the following instructions:
