This is a diabetic recipe but since we don't care alot for cornmeal muffins I've never tried it. Good luck!
1 cup all purpose flour 1 cup yellow cornmeal 1/3 cup sugar 1 tablespoon baking powder 1 teaspoon salt 2 tablespoons finely chopped onion 1 cup cream style corn 1/2 cup light mayonnaise 3 tablespoon vegetable oil egg subsitute equivalent to 1 egg
In a large mixing bowl, combine dry ingredients. Make a well in the center and add all remaining ingredients. Stir just until mixed. Spoon into 12 muffin cups coated with nonstick cooking spray. Bake at 400 degrees for 20 minutes. Yields 1 dozen
Exchanges: 1-1/2 starch, 1-1/2 fat Nutritional information 1 muffin is 189 calories,434mg sodium, cholestrol 2mg, carbohydrate 29mg protien 3gm and fat 7gm.
