Stuffed Mushrooms with Crabmeat
20 Large mushrooms 1 cup Spanish Onions,finely chopped 3tbs olive oil 1/2 cup fresh Parsley,finely chopped 6 oz can of canned crab 1/2 cup of parigiano cheese 2 eggs 1/2 cup bread crumbs salt pepper
1. wash the mushrooms one by one, removing the stems gently. Drain caps on a paper towel. Chop the stems. In a saute pan w/heated oil cook onions until translucent, add chopped mushroom stems, simmer for about 10 min.
2. In a bowl combine parsley, crab meat, onion/mushroom mixture, cheese, eggs and bread crumbs. Season w/salt and pepper and mix well.
3. fill each cap with mixture, pressing well into the cap.(mound the top slightly). place the caps on a greased Baking sheet, drizzle some olive oil atop caps,add fresh parsley and some parmigiano.
4. Bake 20-25 min place under broiler for 1 min, brown caps.
