CHRISTMAS CAKE ICE-CREAM
Ingredients~ 1/2 cup raisins 1/2 cup sultanas 1/2 cup currants 1/4 cup glace cherries, chopped(red and/or green) 1/4 cup mixed peel 1/4 cup fruit juice (or other liquid!) 1 teaspoon cinnamon 1 teaspoon grated nutmeg 1/2 cup almonds, blanched 1/2 cup cup cream 1 litre chocolate icecream
Method~ Combine fruit and spices, and soak in the fruit juice (or other liquid) covered, overnight. Mix together, soaked fruits, almonds, cream and chocolate icecream until evenly combined. Pour into a large mold, cover with foil and freeze, at least of one week, to allow flavour to develop. Unmold by quickly dipping in hot water and inverting onto a serving platter.
