Think this is what you mean, Ian. If you don't have time for this, just soak some dried fruit, cherries etc in some kind of alcohol like brandy and stir into softened store-bought ice cream along with some nuts etc., then refreeze.
Iced Christmas Pudding (from the Complete Colour Cookbook published by Octopus)
2/3 cup milk
4 oz. marshmallows
1 tsp. cocoa powder
1 tsp. instant coffee powder
1/3 cup sultana raisins
2 tblsps. currants or dried cranberries
2 1/2 tblsps. sherry
1/2 cup chopped maraschino cherries
1/2 cup chopped nuts
1 1/4 cups heavy cream, stiffly whipped
2 1/2 tblsps. confectioners sugar, sifted (optional)
Maraschino cherries for decoration
Put milk, marshmallows, cocoa and coffee into a pot. Heat gently until marshmallows are nearly melted. Leave to cool.
Meanwhile, mix the dried fruit with the sherry. Soak for 30 min. then add to marshmallow mixture with the cherries and nuts. Freeze for a short time till slightly thickened. Fold the cream into this mixture and pack into a chilled bowl. Freeze till firm. Turn out, decorate with cherries if desired, and serve with more shipped cream (flavoured with brandy and sweetened with confectioners sugar or with brandy butter. Can serve crisp cookies with pudding if desired.
