This is our FAVORITE leftover turkey recipe--my kids love it and sometimes we bake a turkey breast just to have turkey for this recipe. It truly doesn't taste like "leftover" and is nice enough to have for company!!!! It warms up great in the microwave--I always make a lot so that there's leftovers of this to warm up. It's a great recipe--I serve it with broccoli and a nice salad.
1. Cook 1/2 pound linguini (follow regular directions to cook)
2. Saute 1/2 to 3/4 pound mushrooms (Add more or less to your taste)
3. Shred 2 - 3 cups turkey (chicken also works in this)
4. Make a sauce of: (I do this in the microwave.)
3 TBSP. butter or margarine 2 TBSP. flour 2 cups chicken broth 1 cup heated whipping cream--I frequently use 1/2 & 1/2 or sometimes have used milk 3 TBSP. dry white wine--I usually just use a little extra cream or milk
Melt butter. Add flour and cook a few seconds until bubbling. Add warm chicken broth. Beat with a wisk. Bring to a boil and boil for 1 minute. Remove from heat or microwave. Add cream and wine.
5. Put together by placing linguini, turkey, sauce, mushrooms in a casserole dish. Toss lightly to distribute sauce evenly. Add salt, pepper and parsley flakes to taste.
6. Bake at 350° for about 20 minutes until dish is lightly browned and bubbling. Don't overbake--just heat through.
