TURKEY HAWAIIAN Here is one we enjoy with leftover turkey. You can omit the small onions if you cant find them and it is still good. Serves 4
2 eggs beaten 1/2 cup flour 1/2 teaspoon salt water 2 cups cubed cooked turkey fat for frying 1 can (13 1/2 oounces) pineapple chunks 2 tablespoons cornstarch 1 tablespoon butter 1 tablespoon chicken-stock base 1 each green and red peppers cut into eighths 1 tablespoon soy sauce 1 can [8 ounces] onions drained (optional) Sometimes I add a small can of mushrooms
Combine first 3 ingredients and add 3 tablespoons water, blend until smooth. Add turkey chunks and fry until golden. Drain and keep warm.
Drain pineapple juice into a saucepan. Blend in cornstarch, add butter, pineapple and remaining ingredients. Simmer for 5 minutes, stirring frequently. Add turkey chunks and serve at once over rice or Chinese noodles.
