Here is a "basic" ham bone soup recipe. You can, of course, add any veggies you want to this. For low fat and low cholestrol diets, boil the ham bone first and let it sit in refrigerator until the fat floats to surface. Skim fat off before using broth.

MIXED BEAN SOUP

1 Bag of Mixed Beans (soak overnight in cold water)
1 chopped onion
1 can tomatoes
1 ham bone
salt and pepper to taste

Put all ingredients in crockpot and cover with water (part vegetable broth, part water is also good) . Simmer 5 hours on high setting, covered. Add more water as needed.

This is good served with corn bread.
