I have not tried these but they
sound like they would taste good.
I love anything filled.
APPLE FILLED BRAN MUFFINS
1/2 c. chopped apples
2 tbsp. brown sugar
1 tbsp. margarine, softened
1/2 tsp. ground cinnamon
1 1/4 c. flour
1/3 c. granulated sugar
1 tbsp. baking powder
1/4 tsp. salt
1 c. bran cereal
1 c. milk
1 egg, beaten
2 tbsp. cooking oil
--For Apple Filling:--
In a small bowl stir together apples,
brown sugar, margarine and cinnamon.
Set aside.
--For Muffins:--
In a large mixing bowl stir together
flour, sugar, baking powder and salt.
In a medium bowl stir together cereal
and milk; let stand for 5 minutes.
Stir egg and oil into cereal mixture.
Add cereal mixture to dry ingredients,
stir just until moistened. Place
paper liners in 12 muffin cups.
Spoon about half of the batter into
muffin cups. Top each with a rounded
teaspoon of apple filling and then
the remaining batter. Bake in a
400 degree oven about 20 minutes.
