I found this recipe in an Amish cookbook a couple of years ago. My husband really likes it. He has me make it often.
Heat together:
1 1/2 cups apple cider vinegar
1/2 cup water
1/4 tsp. salt
2 bay leaves
1 tblsp. pickling spice
Cut up one medium onion and layer with a ring of bologna in a wide mouth 1/2 gallon jar. Cover with heated mixture. Leave at room temperature a few days. Refrigerate once jar has been opened.
Make sure you have pricked the bologna before putting in jar.
I usually double or triple the recipe and use two rings of bologna in a gallon jar.
