Turkey Florentine
2-10oz pkg frozen spinach 3 tbl butter or oleo 3 tbl all-purpose flour 1 cup milk 1/2 cup whipping cream 1/4 tsp salt dash of pepper 1/4 tsp ground nutmeg 3 cups cooked turkey, cut into bite-size pieces 2 tbl grated Parmesan cheese, divided.
cook spinach according to pkg directions, omitting salt; drain. Press dry between layers of paper towels. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. cook 1 minute, stirring constantly, until thickend and bubbly. Stir in salt and pepper. Combine spinach, 1/2 cup sauce, and nutmeg; spoon into a lightly greaed 2-qt shallow casserole. Top evenly with turkey. Stir 1 tbl Parmesan cheese into remaining sauce; pour over turkey. sprinkle with remaining cheese. Bake at 400degrees for 20 minutes or until browned. Serves 4-6
