Crock Pot Roast
4 pound roast (whatever is on sale, I've used sirloin, chuck, & london broil) 4 large potatoes, peeled and cut into one inch pieces 4 large carrots, peeled and cut into one inch pieces 2 medium onions, quartered 1 can of beef broth 2 cloves of garlic
Arrange vegtables on bottom of crock pot, put roast on top (make small slits in roast and insert slivers of garlic), pour beef broth over roast and then sprinkle with salt and pepper. No need to brown the roast, it will brown in the crockpot. Cook on high 10-12 hours or on low approximately 6-7 hours. I normally cook on high and leave it for about 7 hours and I can't use a fork to take it out, I have to use a spatula, that's how tender it is. No need for a knife. You can also make your gravy right in the crockpot after everything is taken out. Enjoy.
