Earlier this year Progressive Farmer's Magazine and Cadre (I gather they provide herbicides etc for peanut growers?) sponsored a PEANUT BUTTER LOVER'S RECIPE CONTEST. The Grand Prize was a Malaysian Garden Wrap - but among the 4 first prize winners was a PEANUT BUTTER LOVER'S CAKE - (I've not made it but it sounds ok) - She made a cake with peanut butter in it and baked in 3 9-inch round pans. Here is the frosting:
3/4 cup butter or margarine, softened 1 cup smooth peanut butter 4-1/2 cups powdered sugar 1/3 cup milk 1 teaspoon vanilla
Beat butter at medium speed with electric mixer until creamy. Beat in peanut butter until smooth. Gradaully beat in powdered sugar; add milk and vanilla, beating until smooth. Add additional milk, one tablespoon at a time, if needed to make spreading consistency.
Enough to frost a 3-layer cake - between layers, tops and sides. She sprinkles 1/2 cup chopped peanuts atop. |
