I BELIEVE THIS IS THE BEST YELLOW SQUASH SOUFLE I HAVE EVER HAD. (sorta like the one they serve at Stevenson's on AR-MO border.

SQUASH SOUFLE

4 medium yellow squash, sliced
1 medium onion, chopped
Salt and pepper to taste
4 saltine crackers, crushed
4 tblsp Melted butter
2 eggs separated
1/3 cup grated cheese, chedder or peppered cheese is good

Steam onion and squash together until tender. Drain excess water and mash well. Add crushed crackers, salt, pepper, butter, 2 beaten egg yokes and cheese. Blend well. Fold in 2 stiffly beaten egg whites. Pour into greased baking dish and bake at 350 degrees about 45 minutes or until set and slighty brown. Serves 4 Also this may be good with zucchini, worth a try.
