Hi, thought i'd add our family favorite... Squash Casserole 3 cups raw squash (slice in half lengthwise, then cut 1/2" slices" l carrot, grated l medium onion, chopped l can cream of mushroom soup salt and pepper to taste l stick of butter/margarine 1/2 c. shredded cheese l bag of cornbread stuffing mix (NO seasoning packet!) Add squash, carrots and onions to boiling water, cook 10 minutes, drain...Blend soup and sour cream, salt and pepper and mix well. Fold in drained veggies..Spray a casserole with Pam and layer half the bag of stuffing mix on bottom and drizzle with half the butter, and put in veggie mix topped with shredded cheese, put rest of stuffing mix on top and drizzle again with other half of butter...Bake at 350 about 30 minutes.... |
