It is HOT even here on Cape Cod. I have just mad my favorite hot weather recipe for my supper tonight.
FROSTY GREEN SALAD 1 pkg lime Jell-O 6-oz cream cheese ( I use whipped cream cheese) 1/3 cup mayonnaise 1 can grapefruit 1 can sliced pears 1 cup hot water
Drain and cut fruit to bite-size pieces. Dissolve Jell-O in the boiling water and refrigerate until thick and syrupy. Whip together until smooth the cream cheese and mayonnaise, at room tamp. When Jell-O is syrupy, whip with electric beaters until frothy, then whip in cream cheese mixture and fold in fruit. Chill until ready to serve. Nice in a ring mold . Serves 4-6.
