I don't know if these are suitable for you, Margo, because of your allergy; but I thought I'd send these because they are such favorites at my house.

Juanita, I just found your posting asking for ground beef recipes - I'm sorry I didn't post them earlier.


Quick Skillet Supper (found years ago on a "Creamettes Elbow Macaroni" box)

1 pound ground beef
1 tsp dill weed (I like to use a little more)
1/2 tsp salt
1/4 tsp ground black pepper
2 cans (16 oz each) Veg-All, undrained
1 can (10 1/2 ox) beef broth or bouillon
1 pkg (7 oz) elbow macaroni (2 cups uncooked)
1 cup dairy sour cream
1 can (3 oz) fried onions, divided

In a large skillet, brown meat; drain. Stir in seasonings, Veg-All, bouillon, and macaroni. Bring mixture to a boil. Reduce heat, cover, and simmer 15 minutes, stirring twice during cooking time. Stir in sour cream and 1/2 can fried onions. Heat through; do not boil. Top with remaining onions.

Makes 6 to 8 servings.


Chopped Beef Stroganoff (the quickest!!) (From Best Recipes Hurry Up Hamburger)

1 1/2 pounds ground beef
1 small onion, chopped (I use freeze dried onions and add them to the drained, browned beef to save time)
1 envelope Lipton Beefy Mushroom Recipe Soup Mix
2 tbsp all-purpose flour
2 cups water (I substitute 1/4 cup of the water with 1/4 cup red wine)
1/2 cup sour cream
Hot cooked noodes (optional)

Cook and stir ground beef with onion in large skillet over medium-high heat until onion is tender; drain. Stir in soup mix, flour, and water. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 10 minutes. Stir in sour cream; heat through. Do not boil. Serve over noodles

Makes about 4 servings.


Kima (This is a "new favorite." I just tried it last week - it's from the August issues of Home Cooking)

1 large onion, chopped
3 tbsp butter or margarine
1 pound ground beef
2 tomatoes, diced
1 (8-oz) can peas, undrained
1 tbsp curry powder
1 tsp salt
1 tsp paprika
1/2 tsp chili powder
1/2 tsp garlic salt (I used garlic powder)
Hot cooked rice

Saute onion in butter for 5 minutes in large frying pan. Add ground beef and tomatoes. Cook slowly for 15 minutes. Stir in peas with liquid, curry powder, salt, paprika, chili powder, and garlic salt (powder). Cover and cook for 30 minutes. Serve over rice.

Makes 4 servings.


I also really like Cincinnati Chili - if you'd like I'll post that later. It's not a quick recipe, so you might not want to make it in this heat. However, it's a really great one!
