Blueberry Cobbler: 2 cups fresh or frozen blueberries 1 Tbs. lemon juice 1-1/2 cups sugar, divided 1/2 cup butter or margarine 1 c flour 2 tsp. baking powder 1/2 tsp. salt 3/4 c milk 1 egg, beaten Whipped cream or topping In a saucepan, combine berries, lemon juice, and 1/2 cup sugar. Bring to a boil; remove from the heat. Set aside. Put butter in a 12 x 7 inch baking dish; place in oven until butter melts. In a small mixing bowl, combine remaining sugar with flour, baking powder, salt, milk and egg. Pour over melted butter. Do not stir! Spoon reserved berry mixture over batter. Do not stir! Bake at 350 for 40 to 45 minutes or until golden brown. Serve at room temp. with whipped cream or topping.
