Sorry!! I hit the wrong key while I was typing the recipe. Anyway, here we go again......
Homemade Cherry Pie Filling
4 c. cherries (fresh or frozen)
1 c. sugar
3-4 Tbsp cornstarch
1/2 tsp almond extract
red food coloring
1 Tbsp margarine or butter
Mix sugar and cornstarch and add to cherries. Microwave til thick, stirring often. It will create its own juice. Stir in almond extract, red food coloring and margarine and fill prepared pie crust and bake as usual.

Red Cherry Cobbler
1 c. sugar
2 Tbsp butter
1 egg
1 c. flour
1 tsp baking powder
1/2 c. milk
Stir in 3/4 c. drained pie cherries or I use about 2 c. fresh cherries
1/2 c. nuts
Bake 30 min. 350 degrees in 8x8" pan.
Glaze: 1/2 c. sugar, 1 c. cherry juice, 2 tsp cornstarch.
Cook together and serve on top of the Cobbler.

When we lived on the farm in Iowa, we had a cherry tree and I always pitted the cherries and froze them in Cool Whip containers for later use. That worked out very well. Good luck!!
