I took a Tex/mex cooking class a long time ago. These are my families favorites Migas 5 corn tortillas 4 tabls oil 6eggs Shredded cheddar cheese salt and pepper
Heat oil in pan. rip tortillas into bite size pieces and heat in oil until soft. Add eggs and salt and pepper. Scramble and cook until done. Top with cheese. Serve with hot sauce.
Hot Sauce
1 can tomato sauce 1 can water 1 teas dry red peppers 1/2 teas garlic powder 1 teas salt 1 teas pepper
Mix well.This keeps in the fridge quite a while. Also good on nachos.
