THIS WAS GIVEN TO ME A FEW YEARS BACK BY MY NEIGHBOR AND I'VE NEVER WANTED FOR ANOTHER RECIPE!
ZUCCHINI BREAD MAKES 2 LOAVES...BAKE @350 FOR 1 HR. 3 EGGS 2 CPS. SUGAR 2 TSP. VANILLA 1 CP. OIL 1 TSP. BAKING SODA 1/2 CP. RAISINS 1 CP WALNUT OR PECAN PIECES 3 CPS. FLOUR 1 TSP. BAKING POWDER 1 TSP. SALT 1 TSP. CINNAMON 1 CP. DRAINED, CRUSHED PINEAPPLE 2 CPS. GRADED OR GROUND ZUCCHINI BEAT EGGS, VANILLA, SUGAR AND OIL TILL FLUFFY. ADD ZUCCHINI, FLOUR, BAKING SODA, BAKING POWDER, SALT, CINNAMON. MIX TOGETHER, ADD REMAINING INGREDIENTS AND MIX AGAIN. POUR INTO 2 GREASED LOAF PANS AND BAKE
