A 'Fix' for Becky...This has a Fresh Peach Filling...but we still call it 'jelly' roll. This calls for Cake flour, if you don't have any SIFT about 3X regular all-purpose BEFORE proceeding with recipe.
PEACH JELLY ROLL Cake Roll: 3 eggs (separated) 3/4 cup cold water...put yolks & water together & beat until it measures 1 quart (4 cups) in volumne. 3/4 cup sugar...add to above; beat 4 minutes 3/4 teasp. vanilla extract...add to above
Sift together 3X the following... & add to the above ingredients: 1-1/4 cups cake flour 1 teasp. baking powder 1/2 teasp. salt Mix these ingredients, but do not beat.
Beat egg whites into soft peaks and fold into above batter.
Pour onto a sheet cake pan lined with WAXTEX (Cut-Rite sticks too much, according to lady who gave me this recipe years ago). Bake at 350 degrees for 20-25 minutes. After cake comes out of the oven; have a tea towel generously dusted with POWDERED SUGAR, ready to turn the cake onto. While STILL WARM roll the towel and cake in a jelly-roll fashion. Allow to COOL THOROUGHLY unroll and fill. FILLING RECIPE FOLLOWS.
