1 Package (8 ounces) Cream Cheese softened 1/2 Cup sifted Confectioner's Sugar 1 Cup finely diced Fresh Peaches 1/8 teasp. Almond Flavoring (extract); or use your favorite
Beat cream cheese until smooth and fluffy. Add confectioners' sugar and mix well. Add almond flavoring. Mix, then add fresh peaches and mix gently. Spread onto cooled and unrolled cake.
REFRIGERATE ROLL, LIGHTLY COVERED, IN REFRIGERATOR. THIS FREEZES GOOD.
BAKING TIPS; Pan size 15-1/2 x 10-1/2 x 1-inch jelly roll pan, or a baking pan that has a 1-inch rim around all four sides. Test cake with toothpick; it should come out 'clean' when cake is done. Cake will be tender and golden in color; don't overbake. If you 'dust' with powdered sugar, before serving...do so at the LAST MINUTE as the cake roll will absorb the sugar if done too far in advance.
