EVERYONE asks for this recipe after they taste it! (Karin requested a recipe like this one a while ago. She could just substitute pecans for the walnuts in this recipe, if she likes.)
Anyway, I thought I'd share it with all of you, 'cause I just KNOW you're gonna love it! :)
BROWN SUGAR POUND CAKE
1 cup butter 1/2 cup shortening 1 pound light brown sugar 1 cup sugar 5 eggs 3 cups sifted flour 1/2 tsp. salt 1 tsp. baking powder 1 cup milk 1 tsp. vanilla 1 cup chopped walnuts Walnut Glaze
Beat together butter and shortening; gradually add sugars, creaming until mixture is light and fluffy. Beat in eggs one at a time.
Sift together dry ingredients; add alternately with milk and vanilla to the creamed mixture. Stir in walnuts. Pour batter into greased and floured 10' tube pan. Bake at 350 degrees 1 hour and 15 minutes, or until done. Cool on rack 10 minutes, then remove from pan. Place on rack over a piece of waxed paper. Pour Walnut Glaze over the hot cake. If icing falls onto the waxed paper, scoop it up and put it back on the cake.
Walnut Glaze: Cream 1 cup sifted confectioners' sugar and 2 Tbsp. butter. Add 6 Tbsp. cream, 1/2 tsp. vanilla, and 1/2 cup chopped walnuts. Blend well.
