This can be prepared ahead of time & tossed together at the last minute. Have a huge bowl because it makes a lot!
Catalina Taco Salad:
1 1/2 lb lean ground beef with 1/4 t. salt - brown & drain & add 1 can kidney beans, drained Cool Completely (I pat with paper towels to absorb extra fat & put in freezer for a little while to speed cooling)
Next, mix: 1 med. onion, chopped 4 tomatoes, diced, or I like cherry tomatoes, halved 1 med. head lettuce, torn 1 ripe, black, avacado, diced (optional, I skip) med. black olives (my addition)
Add: above to cooled meat mixture along with 1 med. bag regular fritos 1 sm. bottle of Kraft Catalina dressing 4 oz. of shredded cheddar cheese
